For the Chicken:

  • 1 boneless, skinless chicken breasts (6 oz each)
  • 1/2 tbsp olive oil
  • 1/2  tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt & pepper, to taste
  • Juice of 1/2 lime

 

Topping & Assembly:

  • 1/4 cup black beans (drained & rinsed)
  • 1/4  cup corn (fresh or frozen)
  • 1/4cup diced tomatoes
  • 1/8 cup shredded cheddar or Mexican blend cheese
  • 1/4 avocado, diced
  • Fresh cilantro, for garnish
