This dish is a wholesome and flavorful healthier version using lean ground turkey instead of beef.  The filling is a mixture of rice or quinoa, onions, garlic and herbs blended with tomato sauce, addiitonal spices then baked to perfection resulting in a colorful, balanced meal that is satisfying and nutrtious!

Ingredients 

  • 4 large bell peppers (any color), tops cut off, seeds removed
  • 1 lb 99% fat free ground turkey
  • 2 cups cauliflower rice (fresh)
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (no salt added)
  • 1/2 cup tomato sauce
  • 1 tsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/2 cup shredded mozzarella or cheddar cheese (for topping)
  • Optional garnish: chopped parsley or basil
